Exclusive weekly Food and Wine pairing with our great friends at White Fox Wines ….
Every week, WLGT will be bringing you a great wine suggestion exclusively selected for you by Bianca and Juliusz Lisowski, our great friends from family run wine importer and supplier White Fox Wines. We will also be pairing it with a perfect partner – a delicious, seasonal dish created by a local chef, using the best produce from a local butcher or producer.
With this being the first week, Bianca and Juliusz Lisowski have selected a Valpolicella Ripasso, and I have matched it with one of my own favourite dishes of all time – home made lasagne using the best British beef from Geoff Hughes Family Butcher (you’ll find them in Chester Market).
Ripasso preserves the freshness of Valpolicella and adds a bit of structure and flavour from the Amarone skins. The result is an extraordinary wine, which can be paired in a thousand ways. It has a good body, for this reason, pairing it with something super light such as fish, simple white meat or salad would be a mistake. On the contrary, it is very good with red meat, especially grilled or braised, since its good acidity balances perfectly its sweetish flavours. Thanks to its body is also a perfect match with game, such as boar meat roast or pheasant stew.
Talking about first courses, homemade pasta with ragù or a mushroom risotto are two wonderful options to pair Ripasso with. And if you do not like meat, then try it with aged cheese.
Bianca and Juliusz have worked with the lovely Begali family for a very long time. They produce their wines on an estate of 12 hectares between Lake Garda and Verona, in the classic area for Valpolicella. This family run winery in the small borgo of Cengia, is nonetheless a top Valpolicella estate, having won plenty of Tre Bicchieri awards in the famous Gambero Rosso guide, Slow Food and Wine Spectator.
